Cette céréale, qui n'a jamais subi de modification génétique, est uniquement cultivée en agriculture biologique (volume limité ce qui la rend assez onéreuse). Son goût a des notes de beurre de noix ou de noisette, un peu sucré. La farine de kamut a une forte valeur nutritive : sa teneur calorique est supérieure de 7% à celle du blé commun. LE + SANTE :Riche en sélénium, il aide à combattre la formation des radicaux libres et l'apparition des maladies cardio-vasculaires .Sa teneur en magnésium et en zinc en font un excellent aliment antifatigue, sa richesse en glucides, lipides et potassium lui confère une valeur nutritionnelle élevée. Le grain de kamut étant 2 à 3 fois plus gros que celui du blé dur, il contient 20 à 40 % de protéines en plus. Il contient aussi plus d'acides aminés essentiels et plus d'acides gras non saturés.
